Yes, because what's copied is real Unicode text, not an image. Any text field that accepts Unicode (social media, WhatsApp, email, source code, file names) accepts the result. The only thing that can vary is the artwork: it may look different from platform to platform, but the meaning and the underlying text stay the same.
The skin tone modifier (5 Fitzpatrick-scale options) only exists for the 133 entries in this group that depict hands, bodies or body parts. Objects, animals and symbols don't have this variation, because there is technically no tone codepoint defined for them in the Unicode standard.
It ignores the joining character (Zero Width Joiner) and shows each simple emoji separately: a family of 4 shows up as four person icons in a row instead of one combined scene. The copied text is still correct, it's just the device's emoji font that is out of date.
